Zucchini time


Got zucchini? Thinking of leaving it on the neighbor’s doorstep in the middle of the night? Try this salad instead. Refrigerating for 30 minutes gives the zucchini time to absorb the tang of the vinegar and spices.

1 large zucchini

2-3 medium tomatoes

1 bell pepper-red, orange or yellow

1 small or medium onion

2 cups hot water

1 cup white vinegar

1 tbs sugar

1 tsp salt

2 tbs Asian Five Spice Seasoning

Black pepper to taste

Combine all vegetables. Dissolve salt and sugar in hot water, add spice, stir, pour over vegetables, add white vinegar and black pepper, stir again, refrigerate for at least 30 minutes. Slice the zucchini thin. Using the Asian Five Spice Seasoning instead of straight red pepper flakes gives you more tang and less burn for those who aren’t crazy about super spicy dishes.
